Happy 4th

So another culinary triumph last night cooking dinner for the family. We went to Mom & Dad’s for the family birthday party. Cooked, ate, had cake, went to the fireworks with the kids.

The menu :

Marinated London Broil
2-3 London Broils
1 Large Bottle of Kraft Zesty Italian Salad Dressing per broil
EV Olive Oil
Balsamic Vinegar
Worcestershire Sauce (Lee & Perrin’s of course)
Saki
1 Large Ziplock bag per broil

Place each London Broil in a ziplock bag. Pour in salad dressing. In one of the empty dressing bottles, add about 1/3 cup each Olive oil and Balsamic Vinegar. Then add about 1/6 cup each worcestershire sauce and saki. Close bottle, and shake to mix. Add 1/3 cup of this mixture to each bag. Seal bag, removing as much air as possible, then shake. Massage steak to get an even coating (you should not be able to see the meat through the marinade) , then refrigerate for 24-28 hours. Remove from bag and grill on lower rack over medium heat until done.


Roasted Potatoes
1 bag red potatoes
olive oil
red wine vinegar
salt
pepper
parsley (dried flakes if fresh is unavailable)

clean and quarter potatoes, leaving on skin. Cut larger potatoes into pieces that are about the same size as the smaller quarters. Place in a bowl, and drizzle on a small amount of olive oil and vinegar. Add about 1/4 tsp each salt and pepper, the about 1/2 tsp of parsley. mix to coat. Place on top rack of grill on medium heat until done – about an hour.


Roast Vegetables
3 each large red, yellow and orange bell peppers
2 larger red onions

Quarter peppers and clean. Clean and quarter onions, leaving in large chunks. place on lower rack of grill and roast until tender, skin side DOWN. Skin may blacken. Remove from grill and julienne, mixing the pieces in a large dish
